Cooking Homemade Biscottis with my Aunt

While I have been on vacation in Vermont my Aunt Linda decided to cook homemade biscottis with me. It was a lot of fun!

I am not much of a baker but I did pretty good. Aunt Linda is a great baker. So I learned from the best: the biscotti queen.

I didn’t think I liked biscotti until I tried her biscottis. Biscotti typically don’t have any fruit and are really dry. We made creative ones.

We made a heath, chocolate chip and apricot one. Also a coconut, mango, apricot and pineapple one. And a chocolate apricot and date one.

They were delicious! What else can I say, except it’s time to hit up the gym again!

I haven’t had biscotti before, but now I want to! It looks great! 🙂

I do like to bake; I’m just not that good at it yet. 😅

  LOL, me too, so we’re in the same boat. 🙂 But I guess the important thing is, we’re willing to learn as we go along!
  
  I like baking cookies and brownies, but recently I wanted to expand a bit, so one of the first things I tried was broccoli with mushrooms. (https://thecomfortablecoop.wordpress.com/2017/04/23/caramelized-broccoli-with-mushrooms/ – I like that Elizabeth writes the recipes out in a way that even a beginner like me can follow it. 😊) It turned out really well! Next, I want to try shrimp. She posted two recipes recently that include shrimp and now I don’t know which to try first! 😅 I don’t usually cook with meat because I don’t want to accidentally under-cook it and poison myself, but I love seafood so I really want to learn. 😊

  Yeah, I understand, Following Him, I sometimes find cooking is stressful because it’s like, “Did I remember to turn the stove or the oven off?” And I know what you mean about not wanting food poison. And you have to be extra careful with seafood. But I love cooking seafood with a little rice or veggies because it’s super healthy.

  Oh yes, I’ve done that before as well! Most of the time it’s off, but I have discovered it still on before… Oops. 😅 And one time I forgot to set the timer and I spent the next hour trying to scrub burnt stuff off the bottom of boiler. 😜 I’m absent-minded sometimes; I’ve learned the hard way to never leave the room with the stove on unless I have a timer. And that whenever you boil anything, it likes to boil over as soon as you leave the room…
  
  Yes! I’ve heard that. Which is one reason I’ve been putting it off until my mom can assist me with that endeavor. 😄
  
  That’s just the way I like seafood too! 😀 I haven’t experimented with much seafood other than shrimp. 🙂 Oh, the recipe I want to try with shrimp has noodles and vegetables, but I asked her if I could substitute rice and she said it would work wonderfully, so that’s what I plan to do. https://thecomfortablecoop.wordpress.com/2017/07/21/herbed-shrimp-with-lemon-orzo-and-peas/ I can’t wait to try it! I love shrimp and rice and veggies in general but when you combine them – oh la la! 😍
